Sydney Marathon

Peanut butter protein balls

1 cup Walnuts
1 cup Pumpkin seeds
40g Peanut butter
40g Chocolate protein powder
½ cup Cacao butter
1 tsp Vanilla essence
1 Tbsp Raw cacao powder
Shredded coconut to roll in

In a food processor, blend the walnuts, pumpkin seeds, protein powder, cacao powder and vanilla essence. Transfer the mixture to a large mixing bowl. Melt the cacao butter in a saucepan over low heat then add to the bowl. Add peanut butter to the bowl and stir until mixture is combined and sticking together. If the mixture is still too crumbly, add a little bit of water at a time until mixture sticks together. Roll into balls and coat with shredded coconut. Store in the fridge or freezer.

Yesterday evening Kate Dainton and I attended High Heels and Overalls fundraiser for G.V. C.A.S.A.  This was held in Ken Mustons impressive showroom.
